The Hotel
Built in 2010 by the Melpignano family, Borgo Egnazia is designed as a fully realized Apulian village rather than a conventional resort — its own piazza, its own bell tower, laid out in hand-cut local tufo stone. The layout deliberately disorients in the best way: narrow lanes fold back on themselves, and courtyards open unexpectedly onto more courtyards. After dark, hundreds of real candles are lit throughout the property, turning the public spaces into something closer to a small Italian town than a hotel.
Rooms and Design
The property is arranged in three distinct sections, each suited to a different kind of stay. La Corte is the manor at the village’s edge, with sweeping stone staircases and vaulted ceilings — the most attentive, closely tailored service on property. Il Borgo clusters casette around the central piazza, all sharing the same dusty-blue shutters, and is the closest guests get to feeling like residents rather than visitors. Le Ville are private villas tucked into the surrounding olive groves, each with its own pool, built for families or groups who want their own front door. Interiors throughout lean toward calm rather than spectacle: neutral stone tones, textured linens, and understated furniture that never competes with the view.
Food and Drink
Breakfast is prepared each morning by the Massaie, local Puglian women who bake bread and taralli on site and lay out a spread built around focaccia, same-day burrata, and just-picked fruit. Dinner has real range — Due Camini offers Michelin-starred dining for a more composed evening, while a rotation of piazza-side restaurants serves orecchiette con cime di rapa and local Primitivo for a simpler night. In summer, a pianist performs in the piazza during aperitivo hour.
Spa, Golf, and the Coast
Vair Spa draws on genuine Puglian ritual — sauna, steam bath, ice fountain, and a modern reworking of the Roman bath, using local olive oil, sea salt, and rosemary. An adult-only pool and daily yoga are available for guests seeking quieter downtime. Two private beach clubs, one sandy and one pebbled, are reachable by hotel-provided bicycle, and the San Domenico golf course runs its fairways out toward sea views from the property itself.
